Monday, July 10th through Friday, July 14th ● 11:30 - 2:00 pm ● "Basic Training Bootcamp Week" ● Ages 12 - 99 years old ● Hands On Class ● Lelia Gentle - DreamCatcher Farm ● $450.00 for a Five Session course.  Sometimes it's hard to commit to a six-week program, so in answer to your requests we have created a five-day boot camp comprised of HANDS ON training, guaranteed to have you cooking like a pro in no time! This class is designed for all students from the beginning cook to the cook who wants to fine tune their skills and understand the "whys" of cooking! During this course, you will learn proper knife skills, stocks and basic sauce making, soups, salads, vinaigrettes, techniques such as sautéing, roasting, braising, slow roasting, pan frying, deep-frying and grilling. You will learn how to break down a whole chicken into individual pieces & how to truss meat correctly. You will learn about cooking beef, chicken, seafood, vegetables and starches. After this course, you will feel much more confident in the kitchen & motivated to try out new dishes and create your own recipes! Wednesday, July 12th ● 6:30 - 9:00 pm ● "A Tour of Italy ~ Sicilia" ● Demonstration Class ● Sandra Gugliotta - Dining Elegance Caterers ● $55.00   We will be revisiting different regions of Italy on our third tour - complete with new dishes. This is the seventeenth of a series of monthly classes exploring the different regions of Italy!  Sicilia is the big Island of Italy where it is said it is full of sun where the sun flavors everything from the wheat to the oranges. Known best for fish as a staple cuisine, swordfish and tuna are king in Sicily.  Simple flavors filled with lemon, herbs and vegetables reign.  The climate is mild and sunny and favors olive tree orchards, lemon trees, tomatoes and artichokes from the ground which is rich due to the volcanic presence of Mt. Etna.  Menu: Aulivi Cunsati ~ Olive Condite ~ fresh fennel, mint, garlic and celery marinated olives served with crusty bread ● Insalata di Arance ~ sliced blood orange salad with scallions, parsley and extra virgin olive oil  (Cara Cara oranges can be substituted out of season) ● Truscello Tipico di Messina ~ a baked pork meatball casserole layered with a rich and creamy ricotta and clove cream sauce ● Cannoli Alla Siciliana ~ a homemade fried dough tube filled with a sweet ricotta filling

NEW KIDS CLASS!  Monday, July 17th ● 11:30 - 1:30 pm ● "Basics of Cake Decorating ~ Kids Class" ● Ages 7 - 12 years old ● Hands On Class ● Jesica Jones - Love at First Bite ● $50.00  Learn all of the basics of cake decorating. Some of the topics that will be covered in this class are assembly, filling, crumb coating and flat icing the cake, borders and piping techniques, coloring the frosting, making homemade "bakery" buttercream frosting and much more. Each student will be provided with a 6 inch cake to decorate and take home, show off and enjoy! This is not a Wilton cake class...it's SO much more! ** (parents will not be permitted to stay during class; our staff will be on hand to assist the chef and the students and provide extra supervision) Please arrive early, with your supplies, as we will begin promptly at 11:30 am. ***Ask for your supply list at signup. Monday, July 17th ● 6:30 - 9:00 pm ● "Perfect Homemade Pizza" ● Hands On Class ● Brad Dillon - Black Sheep Bake Shop & Brad's Designer Breads ● $60.00  While perfecting bread and scone recipes, and after taking a pizza class in Italy, Brad has been secretly perfecting a pizza dough recipe, or two, for his own use, and the pizza making technique, which he is now prepared to share with the world. Pizza is the ultimate simple comfort food that everybody can love, when done right. Get over marina, mozzarella and pepperoni, and up your game with multiple types of cheeses (including Gorgonzola), sauces (fig jam anyone?), and fruits (apples and grapes), among other things. Use up that leftover salsa and andouille before it goes bad. Turn up the Heat! Brad will give you the knowledge of how to properly mix, shape, and bake your own pizza. After this class, and with a little planning on a work night you should be able to get a pizza in the oven in 30 minutes, so you will have time to pour yourself a glass of wine and change your clothes before you eat. This is a hands-on class, so wear something that looks good with flour on it, and a little sauce. You will mix dough to take home and bake later, and assemble a pie to take home and bake that day, or sometime soon. If you have any favorite ingredients to use on your own pizza, bring them along.

Wednesday, July 19th ● 6:30 - 9:00 pm ● "Going Bananas" ● Demonstration Class ● Shelley Yoder - Olé, Oh Let's Eat Restaurant Group ● $50.00  Get to take a look into the kitchen of one of the most popular restaurant groups in town - Ole Restaurant Group is made up of Fernando & Christina Martinez's ventures ~ Guacamole, Artesano Tapas, Mercato Italiano, Mussel & Burger Bar, El Taco Luchador & Red Barn Kitchen - and meet the pastry chef who keeps the sweet treats coming.  The most popular dessert from the group is the RBK Banana Puddin' - a magical combination of Banana Caramel, Brule Banana, Toasted Meringue, Nilla Wafers.  But that's not all you will learn as Shelley makes this beauty start to finish ~ homemade vanilla pudding/pastry cream, Italian meringue, banana caramel sauce, homemade banana ice cream and candied almonds (more of a hard caramel candy with almonds in it, not just your typical candied nuts).  The grand finale will be the assembly of this delicious creation.  Each of the components can be used in a number of different ways to create other desserts.  "I think this this a good balance of simple and difficult recipes. And like I said the students will see some good basics and then be able to use them in their own way at home. Plus you get a sneak peak into some of my favorite recipes as well as Olé groups best selling dessert-- the RBK banana puddin'" says Shelley.  Please join us; it's going to be a really great experience.

Thursday, July 20th ● 6:30 - 9:00 pm ● "Let's Roll Another One ~ Advanced Sushi" ● Hands On Class ● Lelia Gentle - DreamCatcher Farm ● $70.00   Hungry for Sushi - let's try something different.  This class will build on the basics of making sushi and add a few fun techniques and methods.  We will learn how to use the kitchen torch to finish rolls, make tempura batter, prepare tamago (Japanese omelet), and make those wonderful, crunchy tempura flakes found on so many of those wonderful sushi rolls. Wednesday, July 26th ● 6:00 - 9:00 ● "Fun with Fondant & Advanced Piping Techniques ~ Cake Decorating" ● Hands On Class ● Jesica Jones - Love At First Bite ● $60.00  In this class you will learn how to create that beautifully smooth finish you've admired on many cakes. Thursday, July 27th ● 11:30 - 2:00 pm ● "Spectacular Summer Vegetable Pies" ● Demonstration Class ● Lelia Gentle - DreamCatcher Farm ● $50.00  Turning a vegetable into a savory pie is an easy way to make something really special ~ an impressive dish to serve for a brunch, a pot luck or an weeknight dinner.  For instance - tomato pie. Tomato pie has been one of the most popular Summer food items for years ~ most likely since this is when tomatoes are at their finest.  Vine ripened Summer tomatoes, fresh basil, local cheese and a homemade butter crust.  Is your mouth watering yet?  We will demonstrate three different techniques in this collection of Summer pies.  Menu: DreamCatcher Farm's Famous Fresh Tomato Pie with Homemade Butter Crust ● a Striking Layered and Pressed Vegetable Torte without a crust ● Spinach Pie with a Phyllo Crust ● and for dessert, a Luscious Plum Torte with Fresh Whipped Cream
